These easy homemade flourless cookies are reminiscent of the holidays and can be easily be gifted to family, friends, teachers, or even neighbors. The cinnamon and ginger paired with almond meal make for an intense holiday cookie.
Makes 2 dozen cookies
Dry Ingredients
1 teaspoon sea salt
1 teaspoon ground ginger
1 teaspoon cinnamon
1 teaspoon baking soda
8 oz almond meal
1-2 cinnamon sticks (optional)
Wet Ingredients
½ cup oil
1 cup agave nectar
Lemon zest
Directions: Mix dry ingredients and place in an 8 ounce glass jar. Add cinnamon sticks if desired. Attach a bow and a card with the following instructions:
Preheat oven to 350°F degrees. Mix ½ cup oil, 1 cup agave nectar, and the zest of one lemon. Remove cinnamon stick and add remaining dry ingredients from the jar and combine. Portion dough into 1” balls and place on a parchment lined baking tray. Bake for 8-10 minutes until tops start to crack*.
